Enticing bright notes of wild cherry, white pepper and raspberry preserves are complemented by notes of mocha and spice. Rich, yet soft, juicy texture with layers of flavors roll endlessly across the palate.
Different grape lots were carefully hand harvested early mornings in September and October of 2016. The clusters were meticulously hand sorted, destemmed, then berry sorted both by hand and via optical sorter. Each varietal was kept separate for fermentation and aging – in combination of whole berry, or crushed, in small, “micro” fermenters where they were carefully punched down by hand during fermentation. Various specialized yeast strains were employed to emphasize the unique characteristics of each grape for the blend. The different lots were then allowed to age for 14 months prior to blending. Once blended, the blend was allowed to merry in barrel for an additional 4 months prior to bottling. The average oak profile came out to 30% New French, 20% once-filled French, and remainder neutral French and American oak.
